Back to the Grind and Weekly Weigh In

I'm baaaacccckkkk! Back to work that is. I really wanted to turn off the alarm and take another day but I had way too much paperwork to get back too. Can I get an amen from the rest of my special ed. teachers?

Yesterday was my weigh in day and thankfully I lost 1.5 lbs!!!


This delicious meal on Sat. night did not help. This is a Philly Cheese steak from the best bar in Myrtle Beach, SC and it is perfection. The vinegar fries were pretty yummy too.
Last week I posted a few goals to help myself get back on track with my weight loss. I only exercised 4 times last week so I didn't make it to make goal of 5 times. I did show a loss though and I did try a new Weight Watchers recipe so 2 out of 3 isn't bad. Although the new recipe was HORRIBLE!!!!! I am going to post it just for ya'll but DO NOT try it!!!
Slow Cooker Buffalo Chicken Pasta
4 Boneless Skinless Chicken Breasts
1/2 cup Franks hot wing sauce
2 Tbsp white vinegar
2 Tbsp melted light margarine
1/8 tsp celery seeds
black pepper to taste
4 wedges Laughing Cow Light Creamy Herb and Garlic
4 cups cooked whole wheat pasta
Place the chicken breasts in a slow cooker. Combine the wing sauce, vinegar, margarine, celery seeds and black pepper in a bowl and mix well. Pour over the chicken and cook on low for about 6 hours ( Mine actually cooks much faster than this but it probably depends on your crock pot). When chicken is cooked, cut it up into small pieces and add the 4 wedges of cheese, stirring until melted. Cover and let it cook for awhile longer, just to let the cheese mix in well. Serve over hot cooked pasta.

Gross... it was nothing but shredded buffalo chicken on pasta. There was no sauce with it.
I even tried putting mine on a FF tortilla shell with FF Mexican cheese and ranch dressing and it was still really bad. I am certainly tearing this one out of my recipe book.

I was SO excited when I saw that recipe....and then SO bummed when you said it was awful. :( It sounds so good...but I guess there's just some food you can't eat on a diet. Bummer. All things in moderation, right?

Congrats on your weight loss! I've been losing too, and it's so exciting! You should check out my blog from today because I posted about this really cool free website I'm using as a weight loss tool :) I bet you'd like it. And um, the vinegar fries are making my mouth water! haha. Too bad about the recipe, but I guess that happens sometimes! I posted the most DELISH asparagus/feta cheese recipe yesterday, it was definitely one I'm keeping in my recipe book!

Great job on the weight loss!! I was so excited when I saw the title of this recipe until I saw where you wrote "gross." haha!!! I'm glad I didn't start copying it down yet :) I am trying for the gym 4 times a week and haven't been able to keep that up...I guess I need to start "scheduling" it instead of just winging it! Haha...I can't wait to see more recipes :)

I read back and see that you have a trip out to California coming up this summer. I hope while you're out there that you take the time to drive out to the coast. There is nothing more gorgeous than the Pacific Coastline. If you were going a different route I would tell you to take a drive down Hwy 1, it is a trip I've made numerous times and is still my favorite vacation. I was born in Georgia, but lived in California most of my life.

btw, I think that last pic is from Provo, Utah.

I look forward to reading about your trip this summer, it will rejuvenate you for sure. I love road trippin' and did it several times with my mom before she passed away. You'll have wonderful memories to treasure for a lifetime. Enjoy!
