Fiesta Rotini

For those of you that are following Weight Watchers; you must try this!
I got it off the back of the whole wheat rotini box.
Ingredients
1 box of whole wheat rotini
zucchini
green peppers
onions
chili powder
black olives
can of diced tomato's
turkey pepperoni
olive oil
Directions
cook noodles
cook vegetables in olive oil
add tomato's and pepperoni
mix in chili powder
add cooked noodles to pan
Here is what it looks like while cooking, minus the noodles.
And here is the finished product. I always serve it with 2 pieces of light bread with spray butter and garlic salt toasted.

New Furniture

I finally have pictures of our new furniture. We love it so much. It was well worth the wait of finding something that was perfect for us. I couldn't get Hubs and Boone off of it long enough to take pictures.

Spring Must Haves

Can I just tell you how ready for Spring I am? I can't wait to pack up my sweaters and fill my closet with Capri's and sandals.

These shoes would be perfect with my red halter dress that I got on clearance a few weeks ago. Added bonus: they are on sale now to.



The shoes are great; except for the rhinestones on the T-strap. I could live without them. Wonder how hard they would be to remove?



This shirt is great. Simple and will go with anything.

* Hubs did really well. He really only got two wrong. I wear an 8.5 instead of a 9.5 and my favorite cereal is Frosted Flakes. Oh, and I have tons of talent. I was voted most talented in high school. Although I am not quite sure why. I can't sing, am a horrible dancer, and can't draw. I can twist my arms inside out, cross my eyes, and touch my nose with my tongue. See, tons of talent. AndI am sad to say that I have worn a girdle.

Monday Weigh In

Not a happy post today... I gained 2 lbs this week. Yes, you read that right. Gained!!! Not supposed to happen. I did really well though out the week. Worked out everyday except for Friday. This weekend we had a softball tournament that our school hosts. It starts on Friday (which was why I didn't have time to work out) and all day Sat. I had a bite of a Snickers and a few (obviously too many) Nachos with cheese. I think the bad thing was that I would pick one up and eat it and then go back and get another and another. By doing that I couldn't keep up with how many I really ate. Then Sat. night we all went out to a local Italian place and I had 4 wings and 3 pieces of bread. Not good. It is also that time of the month with I'm sure different help with water weight.
So this week my goal is to drink lots of water (even more than I usually do) and try to eat different foods. I think that my body may be getting used to eating the same foods all the time. I want to make sure that I have a good loss next Monday morning. So instead of my normal oatmeal and toasted english muffin with honey I had 2 egg whites scrambled with an english muffin and slice of WW cheese. I put a little mustard on it and it was delicious! It tasted just like a Egg McMuffin.

As you can see from above , our weekend was taken up by the softball tournament. After that we were so tired and ended up in bed by 10 each night. Yesterday we went to church and then grocery shopping. We spent the afternoon watching Madagascar 2 and catching up on The Office.

Thankful Tuesday

This week I am thankful for:

1- a new season... softball that is. Yesterday was our first day of practice and we have a lot of work ahead of us this season. I am excited about it though. I love coaching and softball is my favorite sport.

2- A new gym. Beginning in March I will be switching from the YMCA to a small 24 hour gym in the town I teach in. My best friend and future sister-in-law have also joined and I really enjoy spending the time with them. I am going to miss working out with Hubs but it didn't make sense to pay 3 times the price when this other gym is actually more convenient.

3- Being able to fit into 3 pairs of pants that I haven't been able to wear since last winter. I am hoping that even they will be to big before long.


Bachelor Re-cap: I cannot believe that Jillian was sent home. I really though that she would be the final one. I do not like Molly at all. Melissa has been my favorite the entire time and I definitely think that he likes her better than Molly.

My Valentine

I hope everyone had a wonderful Valentines Day! Hubs and I spent the day getting our new furniture organized and then enjoyed a relaxing night of movies and steaks on our brand new grill. We had a wonderful time just being together. I didn't get a chance to post this yesterday so I am going to go ahead and do it now.

Is it summer yet?

This post is just a hodgepodge of useless ramblings.


*The weather here has continued to be beautiful. It is supposed to get a little cooler this weekend but still in the high 50's which is normal weather for us. I have been able to walk outside each day this week and I plan on getting out today too.

*I am finally getting my hair highlighted after school today. And thankfully my eyebrows can finally be tamed.

*I really want it to be summer already.

*I have planned my menu for Valentines Day. Hubs and I are grilling steaks and shrimp on our brand new, humongous grill. For dessert we are having angel food cake with strawberries and cool whip. Yummy!

*Our new furniture should come in either today or tomorrow and we are picking it up Sat. morning.

*I really want a pedicure because I am so ready for flip-flop weather.

* I am so ready for a tan.

Get ready

I have been slacking on Recipe Wednesday. So I have decided to share one of my favorites. This is something that I take everywhere. It goes great with everything. Enjoy!
Pasta Salad

1 box of whole wheat rotini noodles
fat free Italian dressing
Parmesan cheese
black olives
green peppers
onions
turkey pepperoni

directions: mix all together, sprinkle with Parmesan cheese and let chill in fridge
serve cold

This pasta salad is so simple and I haven't met anyone that didn't love it. Plus it is very WW friendly and a great way to get your vegetables in.

Thankful Tuesday

I have so much to be thankful for. Here is this week's list:


1- Warm weather. It is 74 here today. There is nothing better than living in the Carolina's. We have softball workouts after school today and I am so excited to be outside in this beautiful weather.


2- Hair color. Superficial I know. But I love getting my hair colored and cut. Thursday afternoon I have an appt. for highlights (lightning up for the spring) and a cute. Plus my eyebrows are in a serious need of waxing.


3- Blogging. I have met so many amazing women through the blogging world. I have connected with others that are facing the same struggles I am. It is difficult to know that their are other women hurting and longing for the same things I am but it is also comforting to have others that know how you are feeling. I am thankful to have "met" these women.

I saw this today and have been repeating it since then. Is this not the most beautiful and amazing thing you have heard?
Hubs and I have decided that we are going to stop taking the Femara and I am not going to the dr. at all for the next 2 months. The end of March will be 1 year of TTC for us and we are so ready for a break. At the end of the 2 months we will reconsider what we want to do. I am truly happy about taking some time off. We are trusting in the Lord and know that He will bless us with the perfect child for us when it is in His plan. It won't matter if we are taking fertility meds or not. Please keep us in your prayers. I pray for so many of you each day and I know that you are praying for us.

Blah... Monday

Hubs is out of town today. I miss him already. He will only be gone one night but I already want him back home.

I weighed in this morning and had lost 2.2 lbs. I would love to see 4 or 5 lbs in a week but I am super happy with losing anything. I think that losing it slow is better for me. I have learned so much in just 5 short weeks about portion control and calorie content. This puts my total weight loss at 11.2 lbs. I hope to lose another 2 lbs this week. It has been beautiful here (high 60's to the mid 70's) so I have spent a lot of time outdoors and I plan on doing my daily walking outside as much as I can.

This weekend was busy for us... like all weekends. Friday night I had a Girls Night Out and we had a lot of fun. Sat. Hubs and I went out to dinner and shopping with my parents and brother and future sister-in-law. Sunday we had a birthday party for my Grandma's husband (who is not my "real" grandfather. She remarried years after my grandfather passed away. We love him like he was our own though).

Bargain Shopper

I love to shop! Love it. My favorite thing about shopping is digging through the clearance racks and finding an amazing deal. This past weekend I did a little digging and am dedicating this post to sharing my treasures with ya'll.
The red dress I got for $14.00.
After a few more weeks (okay months) of WW I plan on looking just like this in the dress.


This is a church dress that I got for $7.00. It's also going to be really cute for a spring daytime wedding that we have coming up.


I also got a black formal dress that I couldn't find a picture of online. It was only $20.00


Hubs got a dress coat for $24.00 that had orginally been $140.00. He also got a dress shirt for $12. Which is a great deal since he has to wear Big & Tall clothing.

Here is Hub's new truck. This is not a picture of ours (we haven't taken any yet) but this is one I grabbed of google and it looks exactly the same.

I'm weird and I know it

Some of you have already done the 25 Random Things about Yourself post. I was tagged to do this on FB and figured that since I was running low of blog-worthy material today I would share my list with ya'll.

1- I am addicted to Chap stick. Seriously, I have 1 in my purse, 1 in my nightstand, 1 in my bathroom, and one in my living room. I go no where without it.
2- I love sports. I played softball, volleyball, and basketball during high school. I now coach volleyball and softball. I love to watch any sport and attend any sporting event.
3- I change my hair color with the seasons. In the fall and winter I like it darker and in the spring and summer I break out the highlights.
4- My family means more to me than anything. Do not mess with them. Especially my little brother.
5- I teach high school and love it! I could not imagine doing anything else with my life.
6- I have always been a book worm. I love to read and always carry a book with me.
7- My toenails are always painted. Even in the winter.
8- I am a huge fan of anything Disney. I love Disney World and all the movies.
9- If I could only eat one thing for the rest of my life it would be chips with salsa and sour cream.
10- I have had the same best friend for as long as I can remember.
11- My greatest fear is my house catching on fire. I used to be so scared that for my 12th birthday my parents bought me my very own fire extinguisher.
12- The Office is my favorite TV show.
13- I take my lunch to work everyday. I refuse to eat cafeteria food.
14- I consume an obscene amount of water.
15- I get extremely tanned in the summer. Its a combination of working for my dad's lawn care service and laying out by the pool during my summer vacation.
16- Speaking of #15: I love to cut grass. I could do it all day.
17- I love animals of all kinds. Expect for fish and hamsters. For some reason hamsters make me queasy.
18- Wrapping Christmas presents is my all-time favorite thing to do. I love to buy for other people just so I can wrap it.
19- I have naturally curly hair and wouldn't change it for anything.
20- Hubs says that my eyes are the color of "baby poop" because they are so light with a lot of yellow in them. Romantic, I know.
21- My first car was a brand new green Mustang. I had always wanted a yellow Mustang but for some reason when they took me to pick it out I chose green.
22- I hate the city. I am a country girl at heart. And will always live in the middle of no where.
23- I teach at the high school that I graduated from. My dad also teaches here. My best friend teaches at the elementary school beside us. My future sister-in-law is doing her student teaching there also.
24- I love to shop in clearance racks. It makes me feel like I have accomplished something when I can get a great deal.
25- Unfortunately I am addicted to reality television.

*Snow*

Actually we didn't get any snow but the county next to us did so the school I teach at had a 2-hour delay today. Which was perfect, because if they had given us the day off then we would have lost a day at spring break. Which would really stink. So I spent extra time in the bed and thoroughly enjoyed it.

Thankful Tuesday

Here is this week's edition:


1- Weight Watchers. I have been following the points plan for 4 weeks and have already dropped 9 lbs. But most importantly I feel so much better about myself. I am making better choices in what I eat and my activities. I am not nearly as tired as I was a month ago. My clothes are falling off of me and I can't wait to get in my old pants.


2- My Husband. I know that I have listed him before as something that I am thankful for but he really deserves mentioning again. I just finished my 4th round of Femara and it has made me crazy. Friday night was a rough night for us because I was so emotional about everything. I even told him that I didn't want to have to take these drugs if they were going to make me feel the way that I have for the past 2 months. Hubs is so wonderful to put up with my emotions that seem to always be on high these days. I love him more each day and am so thankful for him.


3- The Office. Can I just say that this is my all-time favorite TV show. It is hilarious! Hubs and I have a bedtime ritual of getting in the bed and watching 1 episode of The Office each night. I love it!

Bachelor Recap: I was so sad to see Stephanie leave. She is such a great woman. Just not for Jason though. I am still going with Melessa and Jillian as the final 2. Just not sure which one he chooses. I think that Naomi (who desperately needs a new hairstyle) will go home next week. Although Molly is my least favorite now and I really hope that she goes home soon.

I have to watch The Biggest Loser from last week before I can watch tonight's episode.

Weekend Recap and Weigh In

Why do the weekends go by so fast? This weekend flew by. Friday night I cooked and we just hung out at home. Saturday we went shopping for a new truck and living room furniture. We found both. Of course we have to wait for the furniture to come in but I will take a picture as soon as we get it. Sunday we went to Sunday school and church and then our weekly Wal-Mart visit. We then spent the rest of the afternoon outside throwing baseball's and playing with the dogs. Also, catching up on The Office. We have now finished season 2 and have started season 3. Pam and Jim just kissed for the first time. YEAH!!! I know I still have lots to catch up on. We went to a Superbowl party at my brother's house and had lots of delicious foods. I cheated a little but also ate my WW friendly recipes that I had taken. (If you are doing WW and have not tried the NO Pudge Brownies; you must try them!)

As far as the Weigh In this morning: 3lbs lost! That is the most that I have lost in one week since I started WW. I hope to lose 3 or more lbs this week. This week brings my total loss to 9 lbs in 4 weeks.

The weather is so beautiful here today. High of 61. I plan to do my daily walking outside instead of on the treadmill.
